As early as 1898, Ellen White saw the need for a substitute for a meat diet. She began pressing for health food factories that would produce a healthy, tasty vegetarian food product to replace meat.
She stated that the goal of health food work was to not only provide physical benefits but to be an avenue for leading others to eternal life. Health food factories were to be established in a number of countries to meet people’s needs.
